This recipe was published in the 60's in the Chicago area. This is my version of this great house dressing.
- 4 garlic cloves
- 2 1⁄4 cups extra virgin olive oil
- 1 1⁄2 cups red wine vinegar
- 3⁄4 cup wine (Cabernet Sauvigon)
- 1⁄2 tablespoon black pepper
- 1 tablespoon coarse salt
- 1 tablespoon oregano
- 1⁄4 cup sugar
- Crush and dice garlic, mix all ingredents. Best if you let set overnight before using.
A very nice Italian vinaigrette. I scaled it down by 1/4th.
