Lorri's Pineapple Coleslaw

  • Mix cabbage and pineapple.
  • Mix cream, mayo, sugar and vinegar.
  • Add cream dressing to cabbage and pineapple.
  • Salt and pepper to taste.
  • Store covered in refrigerator 1-2 hours before serving.

  1. If this isn't Cattleman's slaw it is so close that a taste test would have to be done side-by-side. I prepared the slaw and allowed it to sit overnight, leaving off the half-and-half. It is very nice and creamy and we didn't miss the cream. I used a white wine vinegar as the recipe didn't specify. Thanks for sharing.
     
  2. OMG - I can't believe I found your recipe! I grew up in Roswell, NM and the Cattlemen's Steakhouse there served this. I looked up their phone # last week and thought I'd give them a call to see if they would share the recipe. I can't wait to make this (this weekend for a B-Day celebration)!!! THANKS
     
  3. I too worked at Cattlemens?? Worked there in the late 70's ??Cole slaw was delicious. Everytime I visit my hometown of Fabens we visit Cattlemens I have a friend who loves cole slaw so I decided to look up coleslaw and came upon this. So awesome as I was telling her about this one. I made it for her and she loved it. She now requests it along with my cornbread. I serve it with brisket. What else lol. Im a Texas girl always ??Thank you so much for sharing ?
     
  4. I haven't been happy with my coleslaw recipe. So I was looking for a new recipe. Tried this with fresh pineapple. I have never put 1/2 and 1/2 in a coleslaw recipe before. Absolutely wonderful. Love the sweet creamy taste.
     
  5. This is the same recipe my Mom has been making since "forever". It is a really tasty and different coleslaw. I highly recommend it :)

Tweaks

  1. I didn’t have half and half. And yes I have been to the NM Cattlemans restaurant... great fried pies too! So I made this coleslaw with sour cream and mayonnaise... it turned out amazing!!
     
  2. Drain pineapple bits and lay out on a clean towel lined with paper towels. Ring it out gently like you would frozen spinach. The salad did not soup up and the dressing clung to the cabbage much better. No need for half and half....use milk. If you have celery seeds, add them. They add an additional dimension to the taste and texture.
     
  3. I sometimes add mandarin oranges too.
     
  4. I added some Shredded Carrots and Craizens for color and a little extra taste. Everybody always likes this coleslaw.
     
  5. Use 1/4c whole milk and 1/4c coconut cream. Tastes like a pina colada!!

Hey there............ I'm a Yankee (born and raised in Rhode Island), but live in the wonderful Southwest. A nurse by trade, but a chef by choice. I spend most my free time traveling in and around the New Mexico area. Love the mountains of Ruidoso and the culture of Santa Fe. I take care of my parents (Mom has Alzheimers and is extremely active at 81, Dad is a living breathing miracle of a man at 84. EVERY woman deserves one JUST like him, however, I do believe they broke the mold). I travel with them in their Airstream in an attempt to keep them as "normal" as possible. We are a musical family and enjoy dining and entertaining as much as possible. No kids from this shoot, although I raised an army. Have 16 kids (foster children as well as step-children). All have been the light of my life.
