Lori's Cheapo Chicken

"Normally I would not cook this way, but this was EXTREMELY good and CHEAP!"

 

• Ready In: 2hrs
• Ingredients: 7
• Serves: 6

ingredients

• 6 skinless chicken legs (with thighs)
• 1 large onion (minced)
• 2 large garlic cloves (minced)
• 1 tablespoon canola oil
• 1⁄4 cup ketchup
• 1 tablespoon paprika
• salt & fresh ground pepper (to taste)

directions

1. Combine all. Let stand 1 hour.
2. Heat oven 400.
3. Place chicken in a large sprayed baking dish.
4. Bake 1 hour.

Maybe if you use a "spray-on" type of oil, the same sort as you would use to spray the baking dish, and sprayed the chicken pieces with it. Or, cut the oil out completely, I can't see it's absence making any difference to the flavour or quality of this dish. I think applesauce might add an unwanted extra sweetness, the ketchup provides enough sweetness as it is. This is a lovely, tasty and easy dish to prepare and eat.

Super easy. Very cheap. And, the whole house smelled wonderful. I would like to substitue something for the oil to reduce the fat. Maybe applesauce? Any ideas would be greatly appreciated and I'll keep you posted if I come up with something...
