This is a great chocolate cake! Why it's called log cabin, I don't have a clue, other than the fact that it may go back a long time. It's great and that's all that I care about! This is a large cake, so make sure you have the right pan/s for it. I don't really know what size pan to tell you to use. One look at the ingredients will tell you it's going to be huge. I plan to make this in the next week or so, and when I do, I'll come back and post. I hope you enjoy it. I got this recipe from my friend Donna, after having it at her house.
- 2 2⁄3 cups flour
- 2⁄3 cup cocoa
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 1⁄2 cups sugar
- 1 cup vegetable oil
- 2 cups coffee
- 2 eggs
- 2 teaspoons vanilla
- Combine flour, cocoa, salt, baking soda and sugar.
- Make a well in the center of the mixture.
- Add the oil, coffee, eggs and vanilla.
- Blend together.Beat until smooth.
- Bake at 375°F for 1 hour.
In answer this is a very old cake recipe...I found it many years ago in an old workbasket crochet book that was dated in the 1930's.I had used it for many years.It is a very moist and delicious cake.I had misplaced my copy and am happy to have found it online.
