Lobster and Chive Bisque

I haven't tried this yet but I found this in "The Best of Mr. Food 15-Minute Recipes" magazine which my daughter gave me before we left for California. It sounded quick and yummy. For the sherry you can substitute chicken broth.

Well let me be the first to rate this great tasting soup. First I would like to point out a slight error. 1 cup lobster meat is about 1/2 pound. I doubled this recipe and served as an appetizer for 10 this past Mother's Day. It was a great success! I used shallots in place of onion. And my thicking took about 21 minutes. This bisque has great flavor and is easy to prepare. Thanks for sharing. I will prepare this again. George

  1. Melt butter i a dutch oven over medium heat. Saute minced onion 1 minute or until tender. Add flour, stirring until blended. Cook 1 minute stirring constantly.
  2. Gradually add milk and next 4 ingredients. Bring just to a simmer; cook, uncovered 15 to 18 minutes or until slightly thickened (do not boil). Stir in lobster and chives.
