Loaded Baked Potato Soup for Crockpot

"Here is a new crock pot recipe that I just tried.....turned out SOOO good and took SO little effort. I LOVE being able to have the entire mess cleaned up way before supper! My hubby liked this one a LOT....better than my old recipe!"

  • Combine baking potatoes, onion, chicken broth, garlic, butter, salt and pepper in a large crockpot.
  • Cover and cook on HIGH for 4 hours or LOW for 8 hours (potatoes should be tender).
  • Mash mixture until potatoes are coarsely chopped and soup is slightly thickened.
  • Stir in cream, cheddar cheese and chives.
  • Top with sour cream (if using); sprinkle with bacon and more cheese.

  1. Is the 1/4 cup of butter correct? That seems excessive
     
  2. I always wonder why baked potato soup recipes do not show case what baked potato means. Does a baked potato come out in cubes! No, why do we continue to cut potatoes in cubes? Use real baked russet baked potatoes and scrap the insides while warm and slightly mash them and add it to your base. Plus use shells to make potato skins! Thus u have two delights for you and your family.
     
  3. Hi! I am making this for the first time. Do I need to stir the mixture periodically throughout the time that it is cooking?

  1. This is a great recipe!! Very simple and versatile. I added some leftover mashed potatoes (since I had to get rid of them:) and so I didn't add the milk/cream since it helped make it creamy. I prepped it all the night before so it was super easy! Thanks for a yummy and easy dish...perfect for weeknight craziness around our house!

  4. I cut this in half, didn't use the chives and used the substitute for half and half. Wonderful flavor!
     
  5. Made this for the first time last night and my husband and I thought it turned out great! Loved the creamy broth and the "perogie" like flavour.A little but salty, next time ill use a bit less. 1 out of my 2 children liked it and in our house that considered a pretty good recipe lol. Will definitely make again.

Tweaks

  1. I like my potato soup a little thicker so I sauteed my onions first with 1/4 cup flour. I then moved everything to the crockpot and followed the rest of the recipe!
