This is a great recipe!! Very simple and versatile. I added some leftover mashed potatoes (since I had to get rid of them:) and so I didn't add the milk/cream since it helped make it creamy. I prepped it all the night before so it was super easy! Thanks for a yummy and easy dish...perfect for weeknight craziness around our house!
I cannot get over how much I love this soup. This is my new go-to potato soup recipe. I didn't make any changes, except mixing the sour cream into the whole batch at the end. It's so wonderful.
This recipe is fabulous. It's exactly what is supposed to taste like. I like to add the bacon right in the soup, though. And my mom likes bigger pieces of potato so I remove half, mash, replace those then slightly mash again to break up those cubes. But tastewise, perfect.
Enjoyed your soup very much, as did a neighbor couple with whom I shared it! Followed your recipe right on down, putting the sour cream & bacon on the side! This is a good potato soup. It is not what a "loaded baked potato soup" should taste like to me. Maybe it is the size of potatoes used. I got bakers and they were huge. I only used 5 but seemed out of proporation with other ingredients. Made for Spring PAC 2012.
This is the best crock pot potato soup! I have tried several of them in the past and never made a version other then on the stove top that anyone in the family liked. I am so thankful to have this slow cooker recipe to add to my soup rotation for our snowy winters. I did add a little thyme and some Nash Brothers chicken seasoning (a grinder with sage, sea salt, bay leaves and other spices) about one tsp. of each to the pot when I added the ingredients at the beginning. I think the addition of butter really made a difference in the flavor of this soup. Will definitely be making this again. Made and reviewed for Spring PAC 2012.
