  • Cook bacon and Dice potatoes to uniform size and place in large boiling pot.
  • Fill water to half an inch above the "potato line" bring to rolling boil. Set bacon aside to cool and harden.
  • When potatoes are soft, mash them. Season to taste.
  • Add cheese and milk. Don't be afraid to double down on cheese. Keep stirring after this or cheese may settle and cook to the bottom.
  • If needed, slowly stir in flour to thicken.
  • Serve into bowls and garnish with sour cream, chopped onions and crushed bacon :).
