  • Heat 5 to 6 cups water to a rapid boil.
  • Add noodles.
  • Cook for 4-5 minutes or until done.
  • Drain and rinse with water.
  • Have all ingredients ready.
  • Heat 2 Tablespoons oil in a wok; stir-fry carrots, bamboo shoots, bok choy and bean sprouts in that order.
  • Add salt and sugar; cook for 1 1/2 minutes.
  • Toss well and remove.
  • Heat two more tablespoons of oil in a skillet or wok; saute garlic for 15 seconds, then add noodles.
  • Turn heat to medium; add 1/2 cup chicken broth and remaining seasonings.
  • Cover.
  • Let it cook for 2-3 minutes.
  • Turn heat to high.
  • Toss noodles gently.
  • Add vegetables; mix well.
  • Serve hot.
