From "Fast Chicken" / The Hawthorn Series This is quite a chunky soup. Add more stock if preferred.
- 2 chicken breast fillets, diced
- 236.59 ml mushroom, roughly chopped
- 1 onion, finely diced
- 180 g spaghetti
- 1419.54 ml chicken stock
- 236.59 ml basil leaves
- Fry the onion until soft and golden.
- Add the chicken , mushrooms,,pasta and the stock.
- Bring to the boil, reduce heat and simmer for 10 minutes,.
- Stir in fresh basil leaves and season with salt and pepper.
This made a wonderful soup for lunch today. I used one large chicken breast which was browned with the onions. The mushrooms were dried shitake which added a depth to the stock. In place of the spaghetti I used fideo which is a short cut pasta resembling broken spaghetti. The basil leaves were cut and sprinkled over each bowl at serving time. "Bubba" is sick. Well, to be honest, he has a cold. A bad one. Bubba works for us up here on "The Longmeadow Farm", and when he gets sick, I get to cookin' some chicken/pasta/noodle soup. This was a perfect combination of all things that make you well, starting all the way from the chicken, to the mushrooms, ( LOVED THIS!), and fresh chicken stock. The basil is a absolutely terrific addition, was so smooth it could of been ice. Bubba seemed to "perk" up a bit after downing two bowls, and said his throat felt better, and he could hear a bit better since his ear was stopped up. Thank goodness.
