    Little's Chicken and Pasta Soup

      This made a wonderful soup for lunch today. I used one large chicken breast which was browned with the onions. The mushrooms were dried shitake which added a depth to the stock. In place of the spaghetti I used fideo which is a short cut pasta resembling broken spaghetti. The basil leaves were cut and sprinkled over each bowl at serving time.       "Bubba" is sick. Well, to be honest, he has a cold. A bad one. Bubba works for us up here on "The Longmeadow Farm", and when he gets sick, I get to cookin' some chicken/pasta/noodle soup. This was a perfect combination of all things that make you well, starting all the way from the chicken, to the mushrooms, ( LOVED THIS!), and fresh chicken stock. The basil is a absolutely terrific addition, was so smooth it could of been ice. Bubba seemed to "perk" up a bit after downing two bowls, and said his throat felt better, and he could hear a bit better since his ear was stopped up. Thank goodness. No one wants "Bubba" sick, and this made him feel so much better. Thank you! Made for *Everyday is a Holiday* December 2009

      Super easy to throw together - loved the fresh basil and lotsa different textures going on in this one! Completely agree with Laelee about the clean flavor. Fed my family of three with plenty of leftovers for another day. I used little shells instead of spaghetti and probably a few more mushrooms.

      This was outstanding! The flavour was very clean and pleasing,and really this recipe couldn't be easier. Even my fussy kid enjoyed every drop. Thanks for a great recipe!
