These were great little potatoes. We love red potatoes and I am always looking for new ways to fix them. The caraway seeds add a nice rustic flavor that we enjoyed. Went well with recipe #240523 #240523 by Vicki in CT. Made and reviewed for ZWT 6 - Seasoned Sailor and his Sassy Sirens.

Ingredients Nutrition

  • 12 cup olive oil
  • 2 lbs red potatoes, peeled and sliced
  • 2 tablespoons caraway seeds
  • 4 tablespoons butter, at room temperature (1/2 stick)
  • salt and pepper


  1. Preheat oven to 400 degrees.
  2. Pour oil into a roasting pan and heat in the oven for 10 minutes. Remove pan from oven.
  3. Spread potatoes over the bottom of the pan.
  4. Return to oven and roast, uncovered, for1 hour, until the potatoes are crisp on the outside and tender inside.
  5. A few times during the baking, shake the pan to toss the potatoes so they brown evenly.
  6. Add caraway seeds and butter and mix well to melt the butter and coat the potatoes with the seeds.
  7. Season with salt and pepper to taste. --.
