A side dish.Grat for the holidays.
- 5 carrots
- 30 g butter
- 2 tablespoons brown sugar
- 1⁄2 cup cream
- 2 tablespoons chopped chives or 2 tablespoons parsley
- Cut carrots into sticks or rings.
- Cook till just tender.
- Melt butter, add sugar and cook 1 minute.
- Pour in cream and bring to the boil.
- Reduce heat and put the carrots into the pan.
- Toss and serve sprinkled with herbs.
After reading the other reviews, I just barely added the brown sugar. I used chives, and I was really glad I did...never had chives with carrots before, and they added another dimension to this lowly root vegetable. Chives definitely took the carrot to another level! I used 3 large carrots which fed the 3 of us and only 1/3 cup of cream and next time I would only use 1 tablespoon of brown sugar as I personally found it a bit too sweet but was definately outvoted on that by the DS and DM but doing so would be far friendlier on the diabetics as the carrots themselves were also quite sweet being freshly dug from the neighbours garden (a gift). Boy, these were delicious!!!! Creamy tender carrots with just the right amount of sweetness, and so quickly and easily prepared. I put my sliced carrots into the microwave for 10 minutes, another time I might use my steamer. This is quick and easy enough to spoil yourself any night of the week!
