"A little peanut butter cookie with miniature Reese's Peanut Butter cups in the middle of them. Very easy to make, but a small recipe. They go quick so you might want to double it."

directions

  • Combine butter, sugars, egg, peanut butter and vanilla in mixing bowl; beat until smooth.
  • In separate bowl, combine flour, baking soda and salt; add to creamed mixture.
  • Cover dough and chill.
  • When cold enough to handle easily, roll in small (walnut-sized) balls, place each ball in greased miniature muffin tins.
  • Bake at 375 degrees for 8-9 minutes.
  • Remove from oven, gently press 1 peanut butter cup into each cookie to make depression. (I placed the candies in the freezer to make them easier to handle when placing in the cookie.).
  • Cool in pan 10 minutes; remove from pan and cool on rack.
  • Store in cool place until serving time.

  1. Excellent! I was out of Reese's mini peanut butter cups so I just made the cookies without them, and they were still very good.

  3. Although I haven't yet tried your recipe, I have made similar using readymade cookie dough. I was posting more for a tip. Before you put the cookies in the oven, or while they are in, UNWRAP all of the mini PBcups to have them ready to go. You need to push them in right away while the cookie is still soft. I have also used choc chip cookie dough with great results!
