  1. In a medium bowl combine ham, sour cream, tarragon, and white pepper; mix well and set aside.
  2. Place patty shells one on top of the other.
  3. Press lightly to seal together.
  4. On lightly floured board, roll out dough to a 1/16th inch thick; cut into 16 4-inch squares.
  5. Place about l teaspoon of ham mixture in center.
  6. Roll up like a crescent, turning ends in slightly.
  7. If desired brush tops with a beaten egg yolk mixed with water.
  8. Place on jelly roll pan.
  9. Bake in a preheated 375°F oven until golden, about 15 to 20 minutes. Serve hot.
