I make things really, really simple in the summer months. I mean....who wants to cook in all that heat (and I have AC!!) This is a very simple salad....not heavy in the dressing department, but with a nice clean lemony taste. I serve this with a grilled meat or fish and fresh fruit for dessert. Freshly cooked tuna, prawns or cooked chicken can be added for a more substantial meal

I didn't realize that I forgot to rate this! I was looking through my recipe reviews for this and couldn't find it. I made this months ago and absolutely love it! I can't even remember the changes I made to it, but there were a few. I will definitely have to remake this and give a better review! Sorry!

Perfect for the hot days of summer. It's very light, yet tasty. I used white onion in place of red and I used reduced-fat feta cheese. Makes a nice, cool summer lunch, but I would still make this all year round! Thanx for posting.
