I am told that in Thailand, this is sold in plastic bags roadside. Sip it, close your eyes, and imagine you're there. The recipe calls for a handful of coriander. This is actually cilantro, called fresh coriander in Asia.
- Juice the carrots.
- Blend with coriander and coconut milk in a blender or food processor.
This was my juice day, something I try to do once every two weeks. So not to overdo the sugars in this 24 hr.period,I used 2oz coconut milk and 2oz 1% milk. I was not sure what to do with the cilantro, chop it and drink it?? Well,what I decided to do was bruise it and warm it in the milk while preparing the carrots. While I cannot say that I loved it, I thought it was an interesting taste. I plan to try it without the cilantro next time.
