- Peel lemons carefully with a vegetable stripper. Do not use a rasp.
- Put into a jar with the Everclear. Seal and store for a week.
- Boil water and sugar to make a syrup. Remove from heat.
- Pour liquor through a strainer, discarding peels, combine with the syrup.
- Bottle and keep, ready immediately.
