Posted for ZWT II Africa/Middle East to be used when making Jungle Flame Jungle Flame. As taken from bbc.co.uk web site.
- 1 cup caster sugar
- 8 cardamom pods, green, seeds removed and crushed
- 3⁄4 cup water
- 3⁄4 cup lime juice
- 1 tablespoon lime zest
- Put the caster sugar, cardamom pods and water in pan. Stir over a gentle heat until the sugar has dissolved.
- Take off the heat and allow to cool before adding the lime zest.
LOVED this. I used it as a syrup for chilled lemon cheesecake. I suggest boiling syrup on low for 15-30 minutes so it actually reaches a syrupy consistancy though. Just combining ingredients is not enough.
