  • Cut limes into 8ths length-wise and cover bottom of a large dish with them. I use a big casserole dish. Cover with salt.
  • Put into freezer overnight.
  • Thaw completely.
  • Put into colander and rinse under cold water. Shake dry.
  • Put 1/3 into @ clean jar.
  • Meanwhile, pour oil into measuring jug, stir in turmaric, cumin seeds and crumbled peppers.
  • Pour oil to the very top of jars, limes MUST be covered.
  • Leave in dark place for 3 wks. Enjoy!
