Lime Marinade

Use for scallops, shrimp, chicken or lamb. Makes enough marinade for four servings of meat or fish.

Ingredients:

Servings: 4

• 6 tablespoons olive oil
• 3 tablespoons lime juice
• 1 teaspoon French mustard
• 2 garlic cloves , crushed
• 1 teaspoon chili flakes
• 1 teaspoon dried herbs
• fresh ground black pepper , to taste

Directions:

1. Mix all the ingredients together in a large bowl and use as required.

This is a delicious marinade, easy to make and adds loads of taste to pork, chicken or seafood. I added cumin, honey (1TB each) and extra garlic. I used dried mint and cilantro as the herbs. I also put this on veggies such as onions, tomatoes, mushrooms and red peppers in a pan on the BBQ. Great meal with spuds or rice.
