Lime Infused Atlantic Salmon With Asian Salad

  • Combine all marinade ingredients in a bowl and stir well.
  • Place salmon fillets in a shallow dish and cover with marinade.
  • Rub the marinade gently on to the salmon and allow to rest while preparing the salad (5-10 minutes is more than enough time for the flavours to infuse).
  • Combine salad ingredients (except sesame seeds) in a large bowl and then place on to the serving plates.
  • Combine all ingredients for the dressing. Sesame oil can be quite powerful so if the taste is too strong, counter with more honey and lime juice.
  • Drizzle dressing onto the salad and then sprinkle with sesame seeds.
  • Place salmon fillets top-side down in a hot non-stick pan. Reduce to a medium heat and cook each side for 3-4 minutes depending on the thickness, turning only once. Salmon is best served rare to medium-rare.
  • Place Atlantic Salmon with side salad and serve.

  2. Absolutely gorgeous!!! This is a wonderful recipe that is so quick and easy to prepare and has such a wonderful flavour, which was great tonight as I got in later than planned. I made as is except for adding some carrot and cabbage to the salad, which I quickly warmed on the stove, I also omitted the rocket, just preference. Those things are neither here nor there as it is the main flavour of a gorgeous marinade and a wonderful dressing that makes this dish. I am so pleased to see someone else that recognises over cooking salmon tastes horrible and when cooked right it is so moist and tender and full of flavour. A wonderful post that we will enjoy many more times!!!
     
  3. What a fantastic recipe! The flavours in the marinade complement the fish beautifully as does the superb dressing with the salad. Also, the dish took a minimal time to prepare with maximum taste. I strongly recommend this recipe to all cooks - experienced and those (like me) who are challenged in the culinary arts.
