Lime Crescents

"I love the flavor of lime and this recipe caught my eye...I haven't tried it as yet, but fully plan on it...this recipe is from an older edition of Family Circle."

  • Beat butter, egg yolk, lime rind and juice in large bowl until smooth.
  • On low, beat in confectioners' sugar, flour and salt until blended.
  • Refrigerate dough 1 hour or until firm.
  • Heat oven to 350 degrees.
  • Form 1 rounded teaspoon dough into 2-1/2 inch log; bend into crescent.
  • Place on ungreased baking sheet.
  • Repeat with remaining dough.
  • Bake in 350 degree oven 10 minutes or until edges are just golden and tops are slightly cracked.
  • Let cool on baking sheet 5 minutes.
  • Remove cookies to wire rack and let cool completely.
  • Drizzle: Stir together confectioners' sugar and lime juice in a small bowl until smooth.
  • Place wire rack with cookies over waxed paper.
  • Decorate cookies with drizzle and sprinkle with decorator sugar.

  1. The lime flavor comes out very nicely. I would recommend an extra 2-3 minutes baking time, as my first batch turned out a little under done. The second was just perfect. Also, I only used 1/2 cup icing sugar for the glace. Very nice cookie. :)
     
  2. Although these cookies turned out well in the end, I had a lot of trouble with the dough. I knew when I blended in the dry ingredients that the dough was too dry to form any shape, & it was still the case after an hour's refrigeration. I wound up adding about 1 Tbsp melted butter and a dribble of milk to get the dough pliable enough to work, and I guess this added to the baking time as it took them 16 minutes to bake. The flavor is good - I think I'd like a bit more lime flavor - and I think I would add a green food coloring to the drizzle -- for which I only used 1/3 cup of conf sugar with the lime juice. I think 2/3 would've been an odd consistency.
