Super easy recipe and quite tasty. Next time I think I would add some cilantro as the flavour is quite basic. BUT the basic flavour is also great if you have a more overpowering main dish. Make sure to add enough salt as that makes a difference as well. I doubled the lime juice. The serving size is very generous, it could be cut in half and still make 4 servings.   1. Rince the barley and drain.
  2. Boil water in a casserole and add the barley.
  3. Cover and cook 1 hour at low heat or until barley is tender and water is absorbed.
  4. Add olive oil and lime juice. Salt and pepper if you want and serve.
