A little different to what I usually do with couscous.


  1. Finely grate zest of the lime then squeeze the juice out.
  2. Chop the coriander.
  3. Boil the chicken stock and lime jiuce together.
  4. Add couscous to stock.
  5. Allow to sit 5 minutes then fluff with a fork.
  6. Add zest and coriander and mix to combine.
  7. Good hot or cold.

We love couscous and I'm a real fan of having a selection of salads ready to go in the fridge. Good taste but I thought overall the mixture was a little dry. I can imagine a little lime vinaigrette stirred through would really bring this salad to life. Made for Aussie / Kiwi Swap October 2012.

Love it. Was my first time cooking couscous and turned perfect.I didn't have coriender at home and I used cilantro instead and is very taste. Thank you for that recipe.
