From Cooking Light. If desired, fold in some toasted coconut or mini chocolate chips before transferring to freezer.
- 1 1⁄2 cups 2% low-fat milk
- 1 cup cream of coconut
- 1⁄3 cup sugar
- 1 1⁄2 cups bananas, ripe banana, mashed
- Combine first 3 ingredients in a med bowl, stirring until sugar is dissolved. Stir in banana; cover and chill.
- Pour mixture into the freezer container of your ice cream maker and freeze according to manufacturer's directions. Transfer to freezer safe container, cover and freeze til firm.
