  • Cook cubed potatoes in salted water, using ½ T. salt, until fork tender. Drain and cool slightly.
  • Microwave cook bacon until crisp, then blot on paper towel until cool enough to handle; crumble.
  • Mix together Greek yogurt and mayonnaise until creamy.
  • In large bowl, add slightly warm potatoes, garlic, onions,bacon, and celery. Sprinkle with pepper, and add any additional salt to taste. Pour in yogurt-mayonnaise mixture and combine gently.
  • May be eaten warm, or chill to intensify flavors.
