Lightened-Up Lemony Chinese Chicken

- 3 cups panko breadcrumbs
- 2 grated lemons, zest of
- 1 tablespoon ground ginger
- 2 tablespoons sesame seeds
- salt
- pepper
- 2 lbs chicken tenders
- 1⁄4 cup soy sauce
- 1 lemon, juice of
- 2 tablespoons honey
- 3 tablespoons chopped fresh chives
directions
- Preheat oven to 400 degrees.
- Mix the panko, lemon zest, ground ginger, and sesame seeds in a 1-gallon plastic bag and mix well. Season with salt and pepper.
- Add the chicken tenders a couple of pieces at a time and close & shake to coat.
- Arrange coated pieces on a baking sheet and repeat until all of the chicken has been coated.
- Bake 20-25 minutes. When done, garnish with chives.
- SAUCE:.
- In a small bowl, whisk together the honey, lemon juice, and soy sauce with just a little bit of water. Serve on the side as a dipping sauce.

Made this for supper the other night & paired it with a combo of brown rice & peas, while doubling the ingredient amounts for the sauce! Also had a side of carrots to go with it all!
