  • Preheat oven to 400F; spray mini-muffin tin with non-stick spray.
  • Sift together flour, salt, baking powder, cinnamon, nutmeg and brown sugar.
  • Peel, core and chop apple.
  • Mix liquid ingredients together and add to dry ingredients. Mix until well blended. Do not beat.
  • Drop batter by rounded teaspoonfuls into mini-muffin tin. Fill about 2/3 full.
  • Back for about 13 minutes until light golden brown.
  • Turn out onto parchment paper over wire rack to cool. Store in air-tight container and/or store in freezer and take out when needed as a snack!
  • Note: This muffin is not too sweet and has a mild fruity flavor. Not overly spicy -- just enough.
