Light Scalloped Potatoes With Cream Cheese

This is a light creamy version of scalloped potatoes that I made up since I could not find a recipe that I liked, even though there are many on 'Zaar for scalloped potatoes. These turned out really good, and were attractive with the bits of peeling inside.

These did taste yummy...but the white sauce never thickened so it was on the runny side...maybe if less liquid was used it would help...we liked the addition of the cream cheese...Made for Spring 2014 PAC...=)

  1. Wash potatoes well and slice very thin.
  2. Melt butter in saucepan.
  3. Whisk in flour, salt and pepper.
  4. Mix in half and half and stir until hot and well blended.
  5. Mix in cream chesse, stir till melted.
  6. Stir in onions.
  7. Spray casserole with cooking spray.
  8. Layer potatoes and sauce in casserole, finishing with sauce.
  9. Bake at 350 for 1 hour 15 minutes.
