These delicious bars can be eaten guilt-free because they are made with applesauce and low-sugar preserves.

  1. Preheat oven to 375 degrees F.
  2. Line 9-inch square baking pan with foil; coat with cooking spray.
  3. On medium speed, beat spread and granulated sugar until fluffy, 30 seconds; beat in extract.
  4. Beat in flour, soda and salt until combined.
  5. Beat in oats.
  6. Reserve 1 cup dough.
  7. Spread remaining dough in pan.
  8. In bowl, combine preserves, applesauce and lemon juice; spread over dough in pan.
  9. Drop reserved dough by 1/2 teaspoonfuls on top.
  10. Bake 40 minutes or until golden.
  11. Cool.
  12. Use foil to lift cookie from pan.
  13. Peel foil from edges.
  14. Sprinkle with confectioners' sugar, if desired.
  15. Cut into bars.

fantastic bars! Simple to put together and wonderful to taste. I forgot the applesauce, was in to much of a hurry but it tasted great with just the strawberry preserves!
