5 stars. This was great, my BF and I both liked this a lot. Nuts and beans fell out of the tortillas, but that was okay they cooked separately and I piled them on top with lots of yummy salsa. I found some low-fat gouda so that was a plus too! Thanks! Made for RSC #11.:D
This made us a very nice lunch. I crushed the beans a little and toasted the pine nuts. Would like to add a bit more spice to it next time. Served it with salsa and sour cream.
It was hard to find a main dish recipe in RSC#11 that wasn't loaded with fat or sugar, so I was happy to see this recipe entered. Unfortuntely, I didn't like these at all. Nor did DH or my youngest daughter who eats most everything. For me, I found the shallots were overpowering because they were essentially uncooked.
This was a good quesadilla. I loved the spinach and black beans together. I did not care for the pine nuts which didn't really suit the quesadilla IMHO. Next time will add jalapenos in their place as it was a little plain. Served with fat free sour cream and salsa.
I am giving this a 3 star review. The only thing I changed was to put the shallots in with the spinach while they wilted as I don't like a raw onion taste. This was an easy and quick lunch that I did enjoy. However, I felt it needed a bit of something else to bring 'pop'. Perhaps a bit of seasoning? I am sure you could get that from salsa if you followed the suggestions and served it with it but I think maybe some spices in the cooking might be good too. I will make this again but I will play around with it.
