  • Prepare salad.
  • Pan cook mushrooms & garlic until tender, use a little water to stop them sticking.
  • Fry onion in oil until cooked, add rice and 1/2 cup stock until absorbed. Keep adding stock 1/2 cup at a time stirring constantly until rice is soft.
  • Stir through mushroom and spinach until warmed through.
  • Serve with side salad.
