I made this with whole wheat pastry flour yummy light fluffy cakes tastes better than with regular flour and I used 2 eggs since I have chickens.....
I am always a little uncertain about "wholewheat" sweets but as I need to improve my diet, I tried this for myself and my 9 yo old. Fabulous!! I omitted the sugar altogether, only used half the oil and Almond milk instead of buttermilk.. perfect with a lovely fructose-only fruit jam and, for my son, maple syrup!! A keeper!!
Amazing - they don't taste as "healthy" as you think. Just super light and perfect- like whole wheat hotcakes. Perfect quantity for 2 people. This is a keeper :)
These pancakes actually are light and fluffy and delicious! I cut the oil in half and omitted the sugar completely (then smothered with butter and maple syrup, of course!) and they were great. My husband agreed this is a keeper.

Great pancakes. We've made them lots of times (the first time with fresh ground, and since then with older). Very light and fluffy. We use applesauce instead of oil, and sometimes add vanilla. Yum!
