I played around with this recipe until it was just right. My husband has high cholesterol, so I wanted a yummy cookie he could indulge in, (a little). When I tried it with only whole wheat they turned out too flat for my liking. These are fluffy and soft and not too sweet.
- 1. Beat margarine for 30 seconds, then add sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl. Beat in the egg whites and vanilla, until combined. Beat in flour and chill, covered in freezer for 20 minutes.
- 2. Combine the 2 tablespoons of sugar and 1 teaspoon of cinnamon, shape dough into 1-inch balls, and roll into the cinnamon-sugar mixture until coated. Place 2 inches apart on lightly greased cookie sheet. Bake at 375 degrees for about 9 minutes, or until the edges are lightly tanned.
