- 1814.36 g red potatoes or 1814.36 g thin skinned white potatoes, scrubbed, cooked, drained, cooled and cut in 1/4-inch, cubes
- 29.58 ml olive oil
- 29.58 ml cider vinegar
- 236.59 ml light mayonnaise
- 236.59 ml plain nonfat yogurt
- 29.58 ml Dijon mustard
- 6.16 ml salt
- 2.46 ml pepper
- 236.59 ml red onion, minced
- 59.14 ml fresh dill, minced
directions
- Put potatoes in a large bowl and sprinkle with oil and vinegar. Toss lightly to coat.
- Mix mayonnaise, yogurt, mustard, salt and pepper in a separate bowl. Stir in onion an dill.
- Pour the mayonnaise mix over the potatoes and toss to coat well. Chill in refrigerator.
