What a fabulous recipe!! I've never had a soup like this before, so this was a wonderful treat. I couldn't make myself use the green-canned parmesan, so fresh full fat parm was put to good use. I also couldn't find light butter...regular went in. Nonetheless, each bite was full flavored and delicious. Thanks so much for lightening this version up for us, Marg. Mmmmm...
I made this soup with leftover roasted chicken and frozen broccoli florets. So good! I served it over some mini ziti pasta and my boyfriend just loved it. You'd never know it was low-fat.
This is a very rich and comforting soup that is great for a chilly day. I didn't have half-and-half on hand, so I substitute it with one cup heavy cream and two cups milk. The soup turned out to be a little thick than I like, so added more chicken broth to make it thinner. Final result was great!
Wonderfully rich and delicious!!! I' m always looking for soup recipes my whole family will love and everyone gave this recipe 5 stars! I used real butter and the regular parmesan because that's what I had on hand (I did use the fat free half and half). This recipe made a ton of soup but everyone is looking forward to eating the leftovers. Thanks so much for posting!
This soup is amazing!
I had to change a few things because I'm in Italy and some of the ingredients are not available in the supermarkets like in the US though...
I used two Tbsp of cream and four of partially skimmed milk instead of the half-and-half, used turkey breast because I didn't have chicken, a vegetable boullion in two cups of water because I didn't have chicken stock, and instead of parmesan used grated gauda cheese and a dash of sweet paprika to add a little bit of spiciness.
