WOW, this bursts with strawberry through and through. I used strawberry diet Jell-O (didn't have any plain) and the food processor because I wanted berry bits left in. It set up very quickly and is light as a cloud. I'd say that the 10 mins is about right on for time to make. This is a beautiful dessert Char, thanks for posting. :D

Posting this note as a caution to other chefs who have a bad habit of taking a perfectly good recipe and mucking it up with too much tinkering. I decided to make this into a mixed berry mousse using a combination of strawberries and raspberries. Then my dining companion mentioned having a thing about berry seeds. Sooooooo I decided to make a fruit puree and send it through a fine sieve. Since I was losing some volume, added some extra berries. Though I'm not sure which of these changes resulted in my problem, the end result has too much liquid and never set - not even after letting it chill over night. All that said, the flavor was just wonderful, light and fruity with a little touch of creaminess. We enjoyed it as a summer berry soup topped with fresh berries and apricots. Promise to make this again soon, this time as presented.
