Who doesn't love banana bread. I reduced this light version to save a few more calories.

  1. Preheat oven to 350 degrees. Blend oil and sugar substitute together in a large bowl. Add banana extract,lemon juice and eggs; beat well.Stir in mashed bananas and set aside.
  2. Sift dry ingredients together and combine with banana mixture. Stir in chopped walnuts. Pour into a standard loaf pan coated with "Pam with flour" non-stick spray and bake for 50 minutes or until a toothpick inserted into the center comes out clean. Cool in pan. Cut into 16 pieces.
