This was a wonderful light tasting cake. Very moist, and flavorful. I had some warm from the oven, with a big glass of milk. Yum! I'll be making this again for sure!
I thought this "cake" was wonderful and I'll definitely make it again. It's unbelievably moist and very flavourful. I like a lot of spices so added about a 1/2 teaspoon nutmeg and another 1/2 teaspoon cinnamon. I also added a heaping tablespoon of ground flax seeds. Im not sure I'd call this recipe apple cake. It was more like apple bars. I used a 9" square pan which holds about the same amount of batter as the 8 X 10 inch pan specified in the recipe, and the cake was only about a inch high when baked. I'm not sure if it should have risen any more than this. The next time I make the recipe I'll use an 8" square pan and see if this makes a difference. It's always a bonus when you find a recipe that is both delicious and good for you!

Yum! This is a great-tasting snack cake. I lightened it up further with the following changes. I substituted Splenda for the sugar and used applesauce for the oil. I added nutmeg and some dried orange peel and increased the baking soda to 1 1/2 t. It is very good and met my teenage daughter's high standards! Thanks for posting.
This is the light cake I had been looking for, for a long time. As much as it is light, this cake is sooo tasty and sooo easy too. I will be baking this very very often. KC_Cooker, thank you for such a healthy and tasty dessert.
