These are delicious and easy!! We had breakfast for supper on a cold fall night, and these were the star! Delicious, fluffy, and thick pancakes. This is now a family favorite! We can't wait to make them again. Thank you :-)
Been cooking over 50 years and this pumpkin pancake is very good and easy. I would definitely use a non stick skillet. The batter is sticky. I would add a little more milk next time as they were a tad thick to us. But the spices were perfect and I like that it won't make a months worth of pancakes for two people .Served with pumpkin butter really yummy!
Full pumpkin flavor! we all loved them. Been trying various pumpkin pancake recipes and this is tops. Looking no further.
I've been wanting pumpkin pancakes and found this recipe. I didn't have cinnamon so I ended up using 1 teaspoon of apple pie spice and omitted the nutmeg and it turned out great. It's just me and my dog for breakfast, so I cooked the batch and will be freezing them for later in the week. Just yummy
Wow! Truly Delish! They tasted like pumpkin donuts without the guilt. I am very particular about my pancakes, and these turned out beautifully. I rarely follow recipes exactly, but I followed this one fairly close. I only use Whole Wheat Flour, so this is a great place to switch your family to whole wheat flour without them knowing it. I used Baking Powder and Baking Soda. I substituted Cardamom for the nutmeg and used extra Cinnamon. Added water for a smoother pour into the buttered pan. I doubled the recipe, cause it makes sense when you have all the ingredients out anyway.
These pancakes were easy to make and had an excellent light pumpkin flavor. Husband and kids loved them. This recipe is a keeper.
I'm only reviewing the flavor, and neither my kids nor I tasted very much pumpkin. They were spiced from the seasonings, but very little pumpkin taste from our perspective.
Delicious! My 2-year-old and I made these on a snow day with some leftover pumpkin from muffins (what do you do with 1/3 can of pumpkin? Why, make more pumpkin things I suppose!). They are SO good, and little guy loved them, too! I substituted maple syrup for the sugar and used whole wheat flour -- still light, fluffy, and pretty darn hearty/healthy as well. Will try with some mini chocolate chips next time.
