  • Place all of the ingredients in a blender, and blend for 30-60 seconds, or until smooth. Chill for several hours.
  • Shake or stir eggnog well to blend before serving. Serve in glasses or mugs with an additional sprinkle of nutmeg.
  • NOTES: You can use 6 packets of Equal instead of the Splenda Granular. If you'd rather not use artificial sweeteners, then substitute the Splenda with 1/4 cup sugar, and use 1/2 cup regular instant vanilla pudding instead of the 3 Tbsps sugar-free pudding.

  2. Just made this and had to taste before chilling it and it was wonderful. I love eggnog and have been avoiding it due to the high fat/sugar content, but this is a keeper!
     
  3. I made it without the egg beaters as I do not have raw eggs or egg whites due to the potential for illness. It was FANTASTIC and delicious.
     
  4. This was such a treat. I love egg nog but haven't had any in years due to the sugar. Even my mother, sister and niece liked it. I will tell you to make sure you use all the called for liquid. I was about a cup short on the milk so I just went ahead with the recipe minus that cup, and it thickened up more than most people would want. I also left out the brandy extract.
