I honestly expected this to be a bit bland, but the cumin, garlic and tomato really add a lot of flavor. But what takes it over the top in the onion topping - don't skip that. The lemon adds a nice perkiness. I did use veggie broth instead of water, I think that adds more flavor. I might add a little more garlic next time. Also, I reduced the lentils by 25%. This resulted in a thickish soup, and I think the full amount would have been more like a porridge. There is nothing wrong with that but I wanted a looser consistency.

  1. Combine lentils, water, garlic, carrots, onion, tomato, cumin and salt.
  2. Cook until thick and mushy.
  3. For garnish, fry onions in olive oil until dark and crispy, stirring constantly to prevent burning.
  4. Put soup in bowl; top with onion; and squeeze lemon on top.
  5. Can put olive oil on top if you want.
  6. Can serve with flatbread.
