This is a great recipe! Using the liquid from the canned beans as a base for the cheese sauce is such a great idea, it really gives it a nice full flavor. I used reduced fat sour cream with good results. These would be great served with roasted or grilled chicken. When I made these I needed a quick and easy meal so I was going to just serve with some buttered pasta, but when I saw how creamy the sauce was I just poured the beans over the pasta and sprinkled with some crushed red pepper for a quick and tasty veggie mac-n-cheese! Thanks for sharing this recipe!

Yep, this is just what I was looking for but did not know how to make it! My young adult kids HATE their veggies, I had three out of four eat them, (the fourth kid) wasn't home for supper) but he is the one that will try anything! It just goes yo show, you don't need a ton of items to make a great dish!!!

We loved these...I don't know what Velveeta is so substituted 2 small tubs of dutch Smeerkaas. This was almost too easy to make, and surprisingly tasty. A real comfort food. Another great recipe that the vegetarians in our family will appreciate. Please see my rating system, 5 stars :) Thanks !
