"My Mother-in-law's recipe. This is very simple but very rich. We eat this for lunch in the summer just by itself. This recipe is for people that don't like a fussy salad."

  1. I made 1/2 of the recipe and made it even less fuss by using unpeeled diced red skinned potatoes. To me, using 1/2 mayonnaise and 1/2 sour cream made it a lighter tasting dressing which I really liked. I added some sliced/diced celery for some crunch factor and only put 1/2 of the pepper amount, which was good, but I may add a little more salt for my tastes and did only put 3 sliced hard boiled eggs. This is a great no mustard potato salad. Thanks for sharing the recipe. Made for PRMR Tag Game.
     
  2. Yummy! Years ago I had eaten a potato salad with sour cream in it and I was always looking for a recipe like it. I fixed this today. I cut the eggs down to 6 eggs and also added about 1/2 cup chopped green olives with pimento. It is really really good! Thanks for a great potato salad recipe!
     
  3. Great and simple potato salad. I did cut down on the eggs, but other than that all remained the same.
