Levantine Pepper Rub

This is a famous levantine recipe for a pepper and spice rub. Use it for legumes, eggplant recipes, but also for beef stew. Cooking time and preparation time are a guess.

I prepared this delicious mix for Recipe #461646. I prepared the quantity I needed so scaled it down the gounded ingredients to: 3/8 tablespoon black pepper, 1/4 (=2/8) tablespoon allspice, 1/4 (=2/8) tablespoon allspice, berries,1/8 tablespoon cinnamon, 1/8 tablespoon paprika, 1/4 (=2/8) teaspoon nutmeg. I used only the 1/8 spoon and and it was very quickly prepared.<br/>The taste was very good, the allpice gave the meat a special flavor and delicious uniquie taste.<br/>Thanks a lot for posting this delicious recipe.

  1. Seperately roas peppercorns and allspice berries.
  2. Let cool and grind them finely.
  3. Mix with the other powders and store in an airtight container.
