We have this every summer when our spring lettuce comes up. I like to use lettuces with a bitterness to them to accent the sweetness of the bananas.
- 1⁄2 tablespoon lemon juice
- 2⁄3 teaspoon sugar
- 3 -4 cups fresh lettuce leaves (baby)
- 1 large banana, sliced
- Combine the lemon juice and sugar. Set aside.
- Clean the lettuce and place in a bowl.
- Pour lemon juice mixture over lettuce and toss.
- Top with banana slices and toss again if needed.
