Lentil Vegetable Stew

• Cook Time: 30 mins

Ingredients:

Servings: 4

• 1/4 cup apple juice
• 1 cup chopped onion
• 1 cup shredded carrot
• 1/2 cup diced unpeeled sweet potato
• 1/2 cup chopped sweet red pepper
• 1 tablespoon chopped garlic
• 1 cup dry lentils, sorted and rinsed
• 4 cups chicken broth
• 1/2 teaspoon cumin
• 1 teaspoon curry powder
• 1/8 teaspoon cinnamon
• salt and pepper

Directions:

1. In dutch oven or soup pot, bring apple juice to a boil.
2. Add onions; cook and stir for 2 minutes.
3. Add carrots, sweet potatoes, peppers and garlic.
4. Cook and stir for 1 minute.
5. Add lentils, broth, cumin, curry powder and cinnamon.
6. Bring to a boil.
7. Cover and cook for 30 minutes.
8. Add salt and pepper to taste.

This is a good lentil recipe. It had a strong cinnamon taste, next time I would leave it out. I think the recipe serves more than 4 servings, more like 6.
