This recipe is a modification of a recipe I found in Consumer Reports Health magazine. I love it because it's tasty and healthy.

  1. Heat oil and cook onion and garlic until they're soft, about 5 minutes.
  2. Add potato, lentils, carrots, water & rosemary to pot. Simmer for 20 minutes.
  3. Remove rosemary. Add pepper, salt, italian seasoning and tomatoes. Simmer for another 10 minutes.
  4. Add parmesan cheese and cook for 5 more minutes.
