More liquid is required, or one should cook the lentils and rice separately. The lentils get overcooked when cooked with the rice. The result was tasty, but I will cook the rice and lentils separately next time.

This wasn't as good as I had hoped as the ingredients sounded promising. Possibly my fault as the recipe doesn't state which type of rice. I used arborio (which i know is one of the most absorbent) and had to use A LOT more liquid than the recipe stated. maybe works better with the 'quick cook' type rice...... i also didn't have the mint which probably makes a difference too. I am going to give it another go and experiment with a different type of rice as the texture was all wrong nd was probably down to me using the wrong ingredients. Made your Lentil Soup yesterday nd that was superb!!!! A full batch went at supper time and requests already received for another one. Thank you.
